Baked Tarragon Chicken in Creamy Dijon Sauce

Dinner last night was later than expected since I didn’t get home from a great workout until 8:30 pm…exhausted and absolutely famished.  I had set out chicken for tonight with no real plan of what to do with it.  So what’s a very hungry girl to do?

Make something quick and easy…but I still wanted it to taste like a gourmet meal I had spent hours laboring in the kitchen to create!

Here’s what I came up with:

 Baked Tarragon Chicken in Creamy Dijon Sauce

What I love about chicken is how versatile it is (take it from someone whose mom’s favorite cookbook was “365 Ways to Cook Chicken” when I was growing up so I’ve learned a thing or two, trust me—love you Mom!) ;)

Ingredients: Serves 6

6 4oz Skinless, boneless chicken breasts

1 tsp. olive oil

6 tsp. dijon mustard

1 tbsp. plain nonfat Greek or regular yogurt

Tarragon

Salt+Pepper

 

Directions 

Step 1: Preheat oven to 350 degrees

Step 2: Whip up the marinade using:

-1 tsp. olive oil

-3 tsp. dijon mustard

-3 tsp. tarragon

-salt + pepper to taste

Step 3:  Wash chicken breasts, place on baking pan lined with foil, and brush both sides with marinade.  Place in oven for 15-20 minutes.

 

Step 4: While chicken bakes, create the Creamy Dijon Sauce using remaining ingredients:

-3 tsp. dijon mustard

-1 tsp. Greek yogurt

-3 tsp. tarragon

Step 5: When the chicken is done cooking, remove from oven and serve with drizzle of Creamy Dijon Sauce

I loooved Dunkaroos (is that what they’re called?)–the little kangaroo animal cracker cookies that you dunk into the cinnamon icing.  And peanut butter crackers.  :)

    My favorite lunch box foods were apple sauce and Oreos, which I still pack in my lunch now. I also loved Capri Suns.

    i need to go find this book ASAP, I love cooking with chicken. Most of my meals revolve around chicken. Your chicken looks really good today, that’s a very easy dish to make too.

    Favorite lunch box item… that is a hard one. I did love the cheese crackers with the peanut butter filling. Those had my heart for quite a few years as a child.

    Oh wow, I totally forgot about dunkaroos! Those were tasty! Also, do you remember those koala bears that were filled with chocolate? I think they were called Koala Yummies or something . . .

    Yummy chicken dish :) Ah, I loved Dunkaroos too! And Fruit by the Foot. I still eat peanut butter crackers every now and then, haha.

    That chicken looks awesome! My favorite lunchbox food item would have to be fruit-roll ups or those crackers and salty orange cheese that came in a plastic box with a red plastic stick. I haven’t had the cheese and crackers in too many years to count but I did recently try Teather dried fruit snacks and Trader Joe’s Fruit Wraps and they were quite similar to the fruit-roll up.     Dude, I saw Dunkaroos at Costco the other day!!! I thought they went extinct but I guess those nostalgic treats are still around! It’s hard to top those…takes me back to elementary school haha.

    I too loved Dunkaroos! I can’t believe Sean saw them at Cosco! I thought they were long gone. I also loved double-stuff oreos… I would try to take them apart so all the frosting was on one side and then make them into quadruple-stuffed Oreos. Of course, this was all before I knew or cared about nutrition…

    Haha! I remember Dunkaroos! I was just talking about those with a fellow food blogger the other day. I packed a fat free bologna sandwich on white bread with pickles for the majority of my elementary school career…
