Eat with Your Eyes-Closed

No, eating with your eyes closed isn’t some crazy new diet trend.  It’s how I made my eggs for breakfast this morning! ;)

You might also know this version of eggs as “over-easy.” It took me forever to realize why waiters would give me weird looks when I ordered my eggs with “their eyes closed” growing up!

As many of you probably know by now, I’m a bit of a messy cook, and flipping eggs has never been my forte.  I learned this trick to create the perfect eyes-closed eggy, and wanted to share my step-by-step:

How to: Eyes Closed Eggs

Step 1: Spray pan with nonstick cooking spray.  Allow skillet to heat up and add egg to the center on low/medium heat.  Sprinkle with salt and pepper.

Step 2: Once egg whites firm slightly, add ~1/4 cup of water to skillet

Step 3: Cover entire egg with heat-safe bowl and turn heat to HIGH.  The steam will cook the egg and “close the eye” (~1-2 minutes)

Voilaa!

Complete Breakfast of Champions:

2 eggs, 3 “slices” of organic Canadian bacon (healthier for you than regular) and a 100% whole wheat Thomas’ mini bagel with 1 tsp. SmartBalance.  Drink of choice: Pai Mu Tan Loose Leaf White Tea (white tea has the most antioxidants for you)

Yum!

Did you have any weird names for foods growing up?

(ex: Ants on a log=celery/peanut butter/raisins)

I literally found out a few months ago that DATES (the dried fruit) are pronounced “DAY-TES”  (as in a romantic date).  I thought they were pronounced “DAH-TAY” (rhymes with latte) haha.  I like my version though so I’m rolling with it :)

Happy Wednesday!

I was just wondering this morning how to make eggs with water! So much better for you than my current “fry in oil” method! :)

    Thanks Kristen!

THIS IS BRILLIANT!!!! I love eggs, but I’m SO flipping-challenged.

lol, I wish dates were pronounced dah-tay. Makes them sound really classy!

  4. 2010 January 6

Oh my goodness this is amazing! I’m useless at the whole flipping thing…cannot wait to try this tomorrow morning!

What a great tip! While I don’t have any weird food names my husbands parents used to call ham- alligator so he would eat it!

not going to lie, at first I thought you meant you prepared your eggs while your eyes were closed. Woo, now that would take some serious skill.

these are so cute :) thanks for the how-to girlie! I am such a failure when it comes to making eggs.

We called strips of toast “soilders”. Makes sense in a way I suppose!

haahha too funny! ive never really heard it called that!! hhmm as for weird food names, maybe not weird but growing up for the holidays my mom always made seitan as our main dish which we always referred to as “The Beast”

That’s my favorite way to eat eggs too! My mom used to make it for me every morning for breakfast!

When I was little, I used to eat Ramen Noodles all the time… except I called them Giggle Noodles! I called them that because when my dad tried to feed them to me for the first time, I refused to eat them…until he told me that they were really called “giggle noodles”, and when you ate them, they made you giggle! from then on whenever I took a bite of them I’d giggle…. oh, the things parents tell you to get you to try new foods… :)

Thanks for the tips!! And haha, love your pronunciation of “dates”! I can’t remember if I had any weird names for foods as a kid, I’m sure I did!

You and your Dah-tays make me giggle!
I love your tutorial on sleepy eyed eggs! I must try it!

totally unrelated, but your title reminded me of it: have you heard of the dining trend where you eat your meal in the dark (usually blindfolded?) Its supposed to bring more awareness to flavors and sensitive textures. I’m really curious to try it out!!

I can’t flip eggs either, this looks great. Fun way to eat and cook eggs…cute.

  15. 2010 January 8

Wow! I had to take a double take! Soo eat- I will try it for sure :)

  16. 2010 January 8

I also thought you were cooking them with your eyes closed!! :)

I don’t know that I have any weird food names… I still call Worcestershire sauce “Wooster” sauce since I couldn’t say it when I was younger. Perhaps the most infamous story my mom likes to tell my brother and I is that she told us everything green in our food when we were kids was “just parsley”!! It definitely worked, because we would eat hidden broccoli, asparagus, etc.

This is such a great trick girl! My success rate with the egg flippin’ (or omelet for that matter) is definitely not that great as well haha ;)

  18. 2010 January 10

i can barely crack a proper egg into a pan.. hope i can learn tho! But looks quite nice. i’ve never tried it with the eyes closed!

  19. 2010 January 14

Such a sweet story … and a great idea for how to flip the egg without breaking the yolk (which I often do).
