Holy Hummus and Garlic Pita Chips

I don’t know about you guys but when it comes to hummus, I am a total food snob.

The best hummus I’ve ever eaten was at Lebanon’s Cafe in New Orleans.  One scoop and I have been spoiled ever since. 

After trying many times to recreate this unforgettable hummus on my own, I finally hit on a recipe that comes awfully close.  It took a lot of trial and error—too much lemon, not enough garlic, adding tahini, etc. until I found the right blend of basic ingredients.  But something was still off.  It tasted just like regular hummus, but not quite like my Lebanon’s hummus. 

I got it right, on a whim, as a I was rushing to prepare a dip to bring to a summer dinner party I was having with friends.  I realized it was the spices that were the key ingredient. 

It was a huge hit and I couldn’t wait to share the recipe with all of you!

Ingredients 

1 can chickpeas

3 spoonfuls minced garlic

1/4 cup lemon juice

2 tbsp sesame tahini

1/4 cup canola oil

Splash of water

Pinch of sea salt

Spices:  ginger, coriander, cumin, black pepper, cardamom, cayenne, turmeric, cinnamon, nutmeg, mustard seed,  red chili powder, poppy seeds, fenugreek, fennel, mace, and cloves  (I didn’t do exact measurements on the spices, just kind of taste-tested and played around until I found the right combo.) 

NOTE: If you don’t have most or all of these spices on hand, try finding an Indian Spice Blend with similar ingredients listed.

Directions

Place all ingredients into blender and blend until desired consistency.  Pair with warm pita bread or garlic pita chips (like my recipe below!)

 

Garlic Pita Chips

Ingredients:

-6 pieces pita bread

-6 Tbsp olive oil

-3 spoonfuls minced garlic

-Sea salt

Directions:

Step 1: Preheat oven to 400 degrees.

Step 2: Cut pita bread into small triangles

Step 3: Combine olive oil and garlic, and brush onto bread.

Step 4: Sprinkle with salt

Step 5. Bake chips for 7-10 minutes until crisp and browned.  Serve with hummus

    Thanks for the words of encouragement on my first day! It’s going really well so far! I’ve made home-made hummus before, but it really just didn’t taste right. I have been looking for a better recipe and this one looks great! I am going to have to try it soon. :)

    Mmm, I love hummus. I really think I’d like spinach hummus too. My favorite is half hummus/half baba ghanoush.

    I, too, have become a bit of a hummus snob. I’ve sampled probably hundreds of kinds, so I’ve learned to be a bit discriminating, I guess. I hate it when it’s too runny; I like the thicker varieties better.
    Anyway, I make a new flavor of hummus every week, so it would be near impossible to pick a favorite, but I really like pumpkin hummus as well as lemon hummus.

    Thank you for the hummus recipe! I have tried DOZENS and I can’t seem to find the right one. I’m going to try this one next time I make a batch! Question – what do you mean by three spoonfuls of garlic…tablespoons? teaspoons?

      Hey Lainie! I loooove my garlic so I used 3 heaping tablespoons, but it really depends on how much garlic you like! Thanks for asking the question so i could clear that up!

    I’m a total hummus snob too! :) Although – push comes to shove and I’ll also gladly devour any tub of hummus put in front of me! :)

    Poppyseed and cinnamon? Those caught me off guard but I’m definitely intrigued :) I’ll definitely have to try that out – thanks for sharing!

    i always tell myself that i’m going to make my own homemade hummus — but then i see the precious sabra’s in the grocery store and can’t resist!
