Maple+Blueberry Infused Pumpkin Spice Pancakes…and Latin Grooves

Well I slept through my alarm this morning and almost missed my favorite exercise class that I look forward to all week: Latin Grooves!  While running out the door I grabbed a quick cup of coffee and a mini banana as a morning snack hoping it would hold me over.

I usually like to have a bigger snack, with more protein before exercise to keep me nice and full, but we are running low on groceries (need to pick up some more peanut butter and fruit!) 

Latin Grooves was a blast as usual, and my AM snack held me over pretty well.  But by the time I came home, I was more than ready for breakfast. 

On today’s menu for breakfast is something I thought off while salsa-ing during class (does anybody else do this????)

I’ve been dying to try Kath’s oatmeal pancakes, and Angela’s Swirl Pancakes so I thought why not combine the two!  Here’s the Simply Savor version:

 

Maple+Blueberry Infused Pumpkin Spice Pancakes

Ingredients

1 cup oats

1 tsp. baking powder

2 egg whites

1 small banana

splash of water

1 tbsp. vanilla extract

1 tbsp. cinnamon and/or pumpkin spice

handful blueberries

drizzle of maple syrup

 

Step 1: Mix the first 7 ingredients together in bowl for pancake batter and pour into pan

 

Step 2: Pour maple syrup in swirls (or any design you want!) on top of batter while cooking

Step 3: On top of maple swirl, add blueberries (I tried to keep the swirl look here, but I think I’m going to have to keep practicing)  ;)

Step 4: Flip once done–add extra bluberries and a drizzle of maple syrup as desired and simply savor!

So simple. So delicious. And I will definitely be making these again.  Thanks Kath and Angela for the recipe inspiration!

 

Well 2 days before I leave for the Healthy Living Summit and I’ve got lots to do including pack, a video post (stay tuned you guys are going to love this!), and plans to go salsa dancing with my girlfriends tonight!  Better get started on the day!

For me, I love walnuts and chocolate chips.  And I admit to still loving to make my pancakes in the shape of Mickey Mouse :)

    Ahh your food looks so good! Those blueberries kind of make my mouthwater! I also love how the picture at the top of your website keeps changing…not sure if that is just something that is happening naturally or you are doing it, but either way, I like it!

    What the heck!? I’m drooling at the site of those pancakes. Especially that last photo :) My favorite pancake addition? Chocolate chips, for sure!

    Have fun salsa dancing!! I took salsa dancing classes as a part of my study abroad program in Mexico last summer—so FUN. I’m sure I looked pretty goofy/awkward but still had tons of fun.

    Your breakfast looks AMAZINGLY delicious!!! I love pancakes with cranberries…warm cranberries just melt in your mouth and kind of meld into the pancakes…yummm!

      Cranberries are a great addition, but I always forget about putting them in my pancakes. I’ll have to add those in next time i make these. Thanks Pam!

    I am always letting my mind wander during workouts (especially running!!!). The pancakes look like they turned out just awesome! Josh and I like to do pancakes for dinner every once in a while and we add bananas and chocolate chips mmm.

    Glad you liked combat!! Have you ever done Attack? I teach Attack – its my favorite Les Mills program!

      You can never go wrong with breakfast for dinner!

      I’ve never done the attack, only the Combat and i think its the bodypump or bodysculpt, but both of them left me feeling very sore (in a good way!) the next day :)
