Pumpkin Pie Coming Right Up…
My family loves having me home over break because I sort of become designated personal chef
I don’t mind though!
My Dad had an early meeting this morning and asked me last night if I could make him some oatmeal for breakfast. When I asked what kind he wanted, the first words that came out of his mouth were pumpkin pie. Looks like the pumpkin apple doesn’t fall far from the tree.
Here’s what I came up with:
OAT-SO-GOOD PUMPKIN PIE

Ingredients
- 1/2 cup rolled oats
- 1/2 cup water
- 1/2 cup skim milk
- 1/2 thinly sliced banana
- 1/4 cup pumpkin
- 2 tbsp sugar-free Torani Vanilla syrup
- Spices: cinnamon, nutmeg, ginger, allspice
- 1 tsp. walnuts
- 1/4 graham cracker, crushed
Directions
Using my microwave method, I stirred all of the above ingredients (except for graham cracker) into a microwave-safe bowl, the night before. I put the bowl in the fridge with a note of instructions for my Dad to follow in the morning.

In the morning:
Remove from fridge. Microwave for 2 minutes (stirring occasionally).
Remove from microwave, stir some more and top with a delicious graham cracker crust.
Finished product:
I enjoyed the same breakfast later this morning with my signature cuppa foamy joe—today it was Dunkin Donuts Original Blend.
This breakfast was delish, and my Dad left me a note giving this recipe his two thumbs up!

Breakfast is my favorite meal so this is a toughy—I’ll narrow it down to 3:
1) oatmeal (obvi)
2) cereal w/ frozen blueberries
3) pancakes (preferably chocolate chip-banana)

My all time favorite breakfast is a veggie omelet filled with mushrooms!
pumpkin is hands down my favorite oats add in — I wish I had some right nowwww.
oatmeal or a smoothie (with spinach in it of course!!!)
