Tasting Plates + Tod’s Point
Phewww…today was a productive one! This afternoon I finished one scholarship application, filled out housing forms for next year, did a little work on the blog, and sold and shipped 3 textbooks on Amazon. All of this was fueled by some delicious snacks, of course.
Including but not limited to…
A nice, hot bowl of steamed mixed veggies tossed in chunky marinara and topped with my Aunt’s homemade EVOO+herb-marinated goat cheese.
Super quick + easy: Just a bag of frozen mixed vegetables microwaved for 2 minutes. Plus 1/2 cup tomato sauce and microwave for another 1 minutes. Topped with 2 tbsp. goat cheese.
- Veggies don’t have to be boring…honestly! You simply have to find ways to prepare them that taste good to you. The options are endless, you can: Roast, steam, saute, stir-fry…mix with pesto, marinara, parmesan cheese, lemon, vinegar, extra-virgin olive oil, spices, etc. They’re also great in mashed potato or french fry form (recipe coming soon)!

And a little while later I enjoyed a sliced kiwi and wheat thins with almond butter and pumpkin butter + Tazo Organic Chai Black Tea
Yumm…the saltiness of the crackers, sweet + spices in the pumpkin butter combined with the nuttiness of the almond butter packed a flavorful and nutritious punch that left my tastebuds very happy
I eat my kiwi with the skin on (some people find this weird) but it tastes great, plus you get the benefits of the additional fiber.

Taste-plates (I like to call them) are a great way get little bites of everything based on the foods you crave. If you try to avoid snacking in between lunch and dinner, you’ll only be starving by dinnertime and overindulge. Small, nutrient-rich snacks throughout the day help to reinforce healthy eating habits, allow you to get a variety of nutrients into your diet, boosts your metabolism, and keeps you satisfied.
As you can see, I also finally tried Almond Butter! (it was on my Foods to Try list of 2009) and i have to say… I found myself missing my peanut butter. But when I pair the AB with this amazing pumpkin butter I received from my blogger Secret Santa, I didn’t mind it! Maybe there’s still hope for almond butter in my future after all, but for now, I’m still a PB girl at heart.
In addition to these yummy eats..I also got in a gorgeous walk with my family at one of my favorite hometown spots called Tod’s Point. It was freeeezing today, but nothing 2 pairs of pants, 2 pairs of socks, T-shirt, sweater, Northface, huge down jacket, scarf, gloves, and wool headband couldn’t fix
It’s about a 3 mile loop around the entire Point. When I’m home, we try to do this every day. It’s feels great to be active, outdoors and spend time with the fam. Today was absolutely breathtaking, words don’t do it justice, so I’ll let the pictures do the talking.

This walk was soo refreshing! I did not want to walk in the cold today, but once I started moving I was so glad I did. Funny how that happens, huh?
After my walk, I ran a few more errands and made it just in time to my Zumba class! When I came home, I was in a cooking frenzy…can’t wait to share some new recipes I’ve been experimenting with!

So, this past weekend, I also tried Almond Butter for the first time. I also purchase the Justin’s Natural and I’m feeling kind of iffy about it. Mine was REALLY seperated (part of the “naturalness” i suppose) and yet also difficult to stir. Did you have this problem?
hhmm, since this was my first jar of AB I’m not sure whether this is normal or not! Mine was definitely separated, but I didn’t seem to have any trouble stirring! I guess we’ll have to experiment with some other kinds to see if this is supposed to happen

I didnt know you could and Ive always peeled them (and lets face it, peeling those things is a pain! They get so slippery=) Im so glad you tried almond butter. Im on a huge AB kick. So good.
