Let me begin by saying how lucky I am to have such amazing readers!  You guys are awesome and I loved hearing your thoughts and creative tips for portion control in my last post!

 

Another reason why I’m lucky??  I have best friends who also happen to be amazing cooks!  I’m seriously spoiled.  Mint Pesto Linguine with Chicken one night, and now this:

Dry Spiced Pork Tenderloin, Zucchini Ribbons & Olive Oil Infused Cous Cous

Unfortunately I don’t have any pictures of the actual cooking process for you guys, because well—I didn’t make any of it!  I literally walked into my friends’ apartment and was handed this delicious pre-made plate of food and a tall glass of Chianti red wine.  Couldn’t get better service in a restaurant ;)

Let me tell you, one bite of this and I was blown away!  Gourmet status and a definite crowd pleaser

This meal was so delicious that I even begged my friend for her top secret recipes to share with all of you!  She gladly sent them to me (thanks girl!) and I couldn’t believe how simple they look to prepare.  Just goes to show that great food&flavor doesn’t have to mean spending forever in the kitchenLove that.

Dry Spiced Pork Tenderloin

Ingredients:

-1 8 oz pork loin
-4 Tbsp flour
-1 1/2 Tbsp crushed black pepper
-2 Tbsp Italian seasoning
-2 Tbsp dried basil
-1 Tbsp dried parsley

Directions:
Step 1: Mix dry ingredients together in bowl
Step 2: Dry pat the pork loin and coat in mixture (covering all sides)
Step 3: In a skillet, heat 3 Tbsp of olive oil and place tenderloin in skillet
Step 4: If pork is extremely thick, cut into slices and sauté until browned

Zucchini Ribbons

Ingredients:

-3 medium squash or zucchini
-3 tsp. olive oil 
-Optional: 1 Tbsp chopped garlic

Directions:

Step 1:  Peel zucchini/ squashes until you get to the core
Step 2: Heat 2 tsp. olive oil in a pan and add zucchini ribbons and sauté
Step 3:  As they start to soften add remaining 1 tsp olive oil to finish

Olive Oil Infused Whole Grain CousCous

Ingredients:

-Boxed couscous (she used the Near East brand)

-1 tsp. olive oil

-garlic to taste

Directions: Follow directions on box

All in all, Roommate Dinner Round Deux was a culinary success. (Missed Roommie Dinner Round 1? Check it out.) This will be a weekly tradition from now on so stay tuned for more great recipes to come!

Dinner ended on a sweet note with a sliver of my friend’s leftover birthday cake (it was chocolate in case you were wondering) :)

Speaking of sweets…I spent 3 hours in my Food Comp/Prep class this week doing blind taste tests of ice creamI know I know…am I really getting a grade for this?  We tested generic, fat-free, sugar free, yogurt, premium brands etc.  It’s no surprise that the top pick was the generic vanilla flavor, although I was happy to find the fat free and sugar free options put up a good fight coming in a close second. 

In the spirit of ice cream tasting, I thought you all might enjoy this Fro Yo Taste Test article I came across the other day.

Do you have a healthy brand you buy or do you prefer the real thing?   What are your favorite ice cream flavors? 

Tough one.  It’s a toss up for me between coffee, chocolate chip cookie dough and rocky road.  When I go out for ice cream, I allow myself to indulge in the real stuff (but ask for the small size)  For home – because I know how hard it is to resist an entire carton of ice cream staring at me every time I open the freezer – I usually grab the Edy’s Slow Churned ice cream/frozen yogurt.  I like topping my froyo with dark chocolate chips and fruit for a sweet treat.

For a little fun: Can any one tell me what commercial the title of this post is from?? Here’s a hint: You’ll be surprised, it’s not very Simply Savor-like.  ;)

    ice cream testing was your class? I need to register for that one! ;)
    I am like you in term of eating regular/healthy version of something. when I go out, I eat the original version and when I’m at home I might modify it to make it healthier. :)

    When I eat ice cream, I like vanilla bean with some more natural toppings: fruit, coconut shreds, peanut butter sauce I make at home… But if I’m eating frozen yogurt, I love green tea or pomegranate with berries and unsweetened coconut on top. Maybe a little kiwi too.

    HOWEVER, my real weakness is sorbet, usually lemon or pink grapefruit. I live in Texas where you want your frozen snacks to be as refreshing as possible and dairy based stuff doesn’t really do it for me.

    PS. Popeyes Chicken commercials have the title song : )

    isn’t the title from Mrs. Dash or something like that? Some type of seasoning, I believe. Yes, I watch too much tv :)

    Hmmm…I just found a REAL froyo place here and love having that option, but I do love real, full fat, premium ice cream, too.

    If we buy ice cream to keep in the house, it’s usually plain vanilla or some of the slow churned ones since it’s not just one serving.

    mint chocolate chip and rocky road will probably always be my favorites. I do love raspberry chip, too, and many, many Ben and Jerry’s flavors :)

      I was actually thinking it was Popeyes but now that you mention it, it is the theme song for Mrs. Dash! so in that case it is very Simply Savor-like (gota love that no sodium spice/salt)

    What a fun class!!!! I love all ice creams, all fro yos…I tend to go for vanilla and just load it up with toppings – fruit, nuts, chocolate chips…yum!

    Love the idea of the weekly roomie dinners. I’m not a pork gal, but the zucchini ribbons sounds amazing. I usually go for plain vanilla–though any flavor with cheesecake in it usually grabs my attention :)

    how sweet of the roomie to make such an awesome din din! Ice cream tasting? I’m so in :) I prefer froyo, but the real kind, from a parlor! My favorite around Charleston is Fresh Berry. Its a little pricey, but your cup includes the yogurt and three toppings (I get all fresh fruit and it is AMAZING)!

    Have fun at the football game this weekend :)

    Dude … i have a food science lab where we taste test stuff too. i love it lol!
    My fave flavour is prolly lemon…. though i love vanilla and strawberry and anything fruity really. and i bet once i try blackberry it will be my new fave.
    oh man.. i thought the title was a song. i mean it is. but .. i thought…. Wahhh!!! *runs away crying*

    You’re right – your friends are awesome! What a great looking meal!

    For the froyo – I tend to get a small size of the real thing. I can really tell the difference, so if I get the real thing, I’m actually satisfied, whereas if I just eat a healthy version, I’m still left with the craving.

    Umm I am like seriously addicted to fro yo… we have a shop called Sweet Frogs which has awesome flavas like tart, cheesecake, strawberry that tastes like fresh strawberries — sooo good and all fat free! I have been known to hit up McD’s for a fro yo cone too during desperate times haha :/

    I have a frozen yogurt addiction–I don’t remember the last time I actually had ice cream!
    My BF and I go every Sat. and I’ve mastered the technique of LAYERING! lol I usually put chocolate on the bottom, put some granola on top of that and add another layer of PB flavor, and I’ll add some white chocolate chips or something else, then I put pistachio on top and cover that with nuts and more chip! Ugh it’s SOOOOO good! Now I want some!

    I love fro yo- the soft serve type. I then like to add granola, berries and chocolate chips on top. Holy YUM!

    Oh god, it’s one of the most annoying commercials. I can hear it playing in my head right now. Luckily, I can’t remember what the product is.

    Interesting way to cook the tenderloin! Did she cook it completely on the skillet?

    I just started reading your post. Its great. I enjoy being able to relate to people around my age.

    My favorite flavor is hands down choc. peanut butter and second would have to be a pecan caramel concotion. I only eat real ice cream once in a while because I have severe stomach problems when I do.

    I try not to buy ice cream much because I literally can not resist. It has become a problem because my stomach ends up hating me. I will be Greens (cheap and best tasting ice cream) or Edy’s slow churn/ frozen yogurt, or Turkey Hill light recipe.

    I love all kinds of ice cream! The rich “real deal”, gelato, fro-yo… everything!

    I wish I knew what commercial that was from, but I haven’t been watching too much TV recently :-(

    I have absolutely zero froyo places in my area (sad story, I know) but i <3 the edy's slow churned.. they have such crazy good flavors! I've literally been waiting all year for the pumpkin seasonal flavor to come out :)
