You Have Got To Try This…
Roomie night dinners are back in full force! Missed Roomie Dinner 1 and Roomie Dinner 2?
This time, Chef Devan prepared the most flavorful and delicious pork dish inspired by Cooking Light’s 5 Ingredient, 15 Minute Recipes. If you are like me and love to make simple dishes in little time that taste amazing, then you seriously need to get this book (and no I am not getting paid to say that)! Every recipe I have ever made from here has been a success and it is hands-down, my “go-to” recipe book.
The recipe was followed to a T except for the addition of nutmeg (for flavaah) and orange juice (tenderizes the meat) to create the perfect marinade.
Korean-Style Pork Tenderloin from Cooking Light
Yield: 6 servings (serving size: 3 ounces pork and about 1 tablespoon sauce)
Ingredients
- 1/3 cup low-sodium soy sauce
- 2 tablespoons sugar
- 1 tablespoon minced peeled fresh ginger
- 3 tablespoons rice vinegar
- 1 tablespoon dark sesame oil
- 1/4 teaspoon crushed red pepper
- 4 garlic cloves, minced
- 1 tsp nutmeg
- 1/4 c. orange juice
- 1 1/2 pounds pork tenderloin, trimmed
- Cooking spray
Preparation
Combine first 7 ingredients (plus nutmeg + orange juice) in a large zip-top plastic bag; add pork. Seal and marinate in refrigerator 6-8 hours or overnight, turning occasionally.
Preheat oven to 425°.
Heat a large ovenproof skillet coated with cooking spray over medium-high heat. Remove pork from bag, reserving marinade. Add pork to pan; cook 6 minutes, browning on all sides.
Place pan in oven; bake at 425° for 15 minutes or until meat thermometer registers 160° (medium) or until desired degree of doneness. Let stand 5 minutes before slicing.
Bring reserved marinade to a boil in a small saucepan. Reduce heat, and simmer 5 minutes.
Cut pork into 1/4-inch-thick slices; serve with sauce.

Served alongside the pork was a deceptively healthy Unfried Veggie Brown Rice. It complimented the dish wonderfully, and tasted just like the real thing!.
Unfried Veggie Brown Rice
Serves 4
Ingredients:
2 cups brown rice
1 can low-sodium chicken/veggie broth (boullion cube)
1 tbsp canola oil
4-5 teaspoons low-sodium soy sauce
3 cups stirfry veggies (frozen)
3 egg whites
Directions:
-In a large pot, bring low sodium broth and brown rice (following box directions for amounts) to a boil. Then cover and allow to simmer until broth fully absorbed.
-In a skillet, add canola oil, egg whites, and vegetables and heat on medium-high. Cook until done (~5 minutes).
-Add soy sauce and rice to skillet and lower heat. Continue to cook for another 5 minutes.
-Serve!
Nutritional Information: Calories: 228 Fat: 5g Protein: 10g Carb: 34g (Fiber: 5g)

Speaking of trying new things, I’m a big believer in trying anything once. I think having variety in your diet is one of the best ways to make sure you’re getting all the nutrients you need, and also makes healthy eating more fun! That being said, I have an ever-growing list of foods that I have been lusting after, but have yet to try! Here’s a sneak peak of my “Foods to Try” in 2009. Think I can cross them off the list before the end of year?
-Kombucha squash
-Pumpkin butter
-Trader Joe’s Charles Shaw wine (aka 2 buck chuck!)
-Almond butter (I’ve only tried making my own, and that did not turn out well)
-Jay Robb Whey Vanilla protein powder
-Cinagro Peanut Butter
(sure I’m missing more, but this is all I can think of!)

great wish list! i recommend tj’s unsalted raw almond butter-its not organic, but it is inexpensive.

Love your “to try” list, many of those items I have tried just bc I heard about them on blogs too….:) 2 buck chuck however, ehhh scared of that stuff, i have heard too many hangover central stories and am skeptical!!! please disprove those though so i can get a lil’ more frugal with my wine expenses, that would be awesome girl!

I think you can cross them all off by the end of the year! If you don’t want to go the 2 Buck Chuck route, TJ’s has come out with a ‘higher end’ wine. But by higher end, I think we are talking $8-10.

Almond butter is yummy!
Honestly, I would like to try a meal that *I* have made! This is because I am afraid to try to cook something (or maybe just feel weighed down my long ingredient lists)…that 5-ingredient, 15-minute cookbook looks helpful.
AND, I want to try Greek yogurt before 2009 is over. I’ve NEVER had any, but after reading your posts that have mentioned Oikos yogurt, I bought some yesterday and can’t wait to try!
Great idea – I think I’ll include a “To Eat” list under my 2010 resolutions (and also a list of 12 full-out meals to cook on my own)!
