You Know You’re a Foodie When…Whole Wheat Chocolate Chip Pumpkin Muffins

You know you’re a foodie when your college tailgate spread includes hummus, salsa, black bean dip and…Chocolate Chip Pumpkin Muffins.

Yep that’s right.  Last game I went to, my friends and I were definitely not prepared snack-wise and let’s just say that by the end of the game…things got ugly.  We were NOT going to make the same mistake twice, so we came prepared with a gameplan.  We did a twist on the conventional tailgate by rolling up our sleeves, throwing on our aprons, and baking up a batch of irresistibly delicious muffins :)

I was so excited to finally put all of your great suggestions to use after I tweeted looking for pumpkin recipes to try!  Here’s what we came up with:

Whole Wheat Chocolate Chip Pumpkin Muffins

Ingredients

-1.5 cup whole wheat flour

-1 15 oz can of pumpkin (I used Libby’s brand)

-2 tbsp pumpkin pie spice (contains nutmeg, cinnamon, ginger and allspice)

-1 tsp. salt

-1 tsp. baking soda

-1/2 cup brown sugar

-1/4 cup maple syrup

-1/2 cup nonfat buttermilk (didn’t have any so we made our own!)

-2 large eggs (or could do one egg + 2 egg white)

-1/2 cup chocolate chips

Directions:

1. Preheat your oven to 350 degrees F

2. Line your muffin try with liners (or spray with nonstick cooking spray)

3. In one medium to large bowl mix or beat the following ingredients: eggs, buttermilk, sugar, maple syrup, and pumpkin.  In separate smaller bowl, combine the remaining ingredients (flour, baking soda, spices)

4. Gradually add the dry ingredients from the smaller bowl into the large bowl while continuing to slowly mix the batter. 

5. Now for the best part… throw in those chocolate chips!

6.  Pour batter into each muffin tray lined with wrapper (1/2 to 3/4 full).  With our leftover batter, we also made a mini loaf! 

7. Bake for 30-45 minutes or until fully cooked (insert toothpick and come out clean)

These were AH-mazing!  Moist, chocolatey, and filled with my favorite Autumn flavors and spices, along with a hint of sweetness.  This recipe made about 12-14 medium sized muffins which clock in at less than ~150 calories each (+4g fiber, 4g protein, and only 2 g sugar!)

And before I go, here are few fun, healthy PUMPKIN facts:

-low in fat (no trans, saturated, cholesterol) and sodium

-good source of fiber

-great source of Vitamin A

-contain beta-carotene and carotenoids (antioxidants that fight cancer and prevent macular degeneration)

-1/2 cup contains only 40 calories and fulfills 1 serving of your daily vegetable requirement

    I’m always on the lookout for new healthy muffin recipes. This one is to die for!

    I recently tweeted that “you know you’re a farmersmarketoholic when…” hahah Mine was that I couldn’t drive near a farmers’ market without stopping and buying SOMETHING.

    So here goes my answer to your question: You know you’re a foodie when you drive an hour to invite-only foodie events, two nights in a row, after work, in the city, just to score free swag, meet the local celeb chefs, and eat free Cabot cheese!

    I don’t know if would call myself a foodie…. just a person who like food… is that the same thing?!?!

    Those look great! You can also sub sliken tofu for the eggs (1/4 cup per egg). Not sure how to sub the buttermilk though . . . I’m going to look that up! I am definitely going to find a way to veganize these :)

    Ok, so apparently it is 1 tps of white vinegar or lemon juice to 1 cup of nondairy milk to substitute buttermilk! :)
